Custom orders please download, fill in and e-mail to us the appropriate cut sheet for your order. We will work with you to produce the custom processing cut sheet including any special requests.
Standard processing cuts will depend on the processing of the whole carcass. A good rule of thumb is approximately 1/3 steaks, 1/3 ground, and 1/3 roasts and other cuts.
